Red Onion, Red Lentil & Green Chilli Soup
Ingredients
4 Large or 8 Small Red Onions
300 g of washed Red Lentils
1 Green Chilli (chopped)
3 Heads of Parsley (chopped)
2 Cloves of Garlic (chopped)
1.5 Ltr of Vegatable Stock
Salt & Pepper
Fry the Onions, Chilli, Parsley and Garlic on the pan, with a knob of butter, for 3 mins.
Add the lentils, salt and pepper to taste and stock, then cover and bring to the boil. Once boiling leave covered, but reduce to a simmer for 25 mins, stirring occasionally.
After an 25 mins remove the soup from the heat and take over to the blender. Put half the soup in the blender and blend for about 30 seconds then pour into a large serving bowl. Repeat as previously by putting the remaining soup in the blender. Blend for 30 seconds and add to the serving bowl. When ready serve with a drizzle of cream and parsley.
