Lamb Parcels

Ingredients

A Neck of Lamb
Streaky Bacon
Spinach
Apple
Cheddar Cheese
Lamb Stock
White Wine
Preparation
Put Olive Oil, salt and Pepper in a dish.
Cut the Lamb into approx 1 inch (2.5cm) pieces.
Cut the cheese into small chunks.
Cut the apple into small chunks.
Method

Take one piece of lamb, roll in the oil, place one piece of apple on one side and a piece of cheese on the other side of the lamb. Wrap one or two spinach leaves around it to make a parcel and then wrap the bacon rasher around the parcel to hold it all in place. Repeat this until you have used up all the lamb.

Place all the parcels in a dish with a little bit of white wine salt & pepper and sprinkle lamb oxo cubes over the top and then add a cup of boiling water.  Cover with foil and place in oven and cook for approx 1 hour at 160 degrees.
